Buffalo Chicken Burgers

I was driving home from work today, trying to figure out something quick and tasty to make for dinner. I wanted something I hadn't eaten in a while, but would also be simple for me to put a healthier spin on it, and for some reason burgers kept coming to mind. So I decided to make buffalo chicken burgers. Using ground chicken or turkey is great because you can make a leaner version of a burger. :)

Ingredients:
  • 1 LB ground chicken
  • 1 1/2 TBS Buffalo Wing Sauce + 1/2 TB each burger to top (I used mild sauce)
  • 2/3 cup blue cheese crumbles
  • 1/4 tsp white ground pepper
  • 1/4 tsp season salt
  • 1 cucumber
  • green leaf lettuce
  • Burger buns (I used whole wheat sandwich thins)


Steps:
  1. Preheat a non-stick skillet over medium heat.
  2. In a mixing bowl, add ground chicken, white pepper, season salt, and 1 1/2 TB buffalo wing sauce. Mix (with your hands is best) until well blended.
  3. Gently fold 2/3 cup of blue cheese crumbles into the ground chicken until mixed.
  4. Using a 1/3 size measuring cup, scoop the meat into you palm and form a patty. Repeat until all patties are made, makes about five patties.
  5. Cook your patties, I did mine in batches. Cook about 8-10 minutes each side until cooked thoroughly. (You may want to finish the last 2 minutes or so with a lid on the pan to help cook them through.) 
  6. Serve on a bun. Top each burger with 1/2 TB buffalo wing sauce, cucumbers, lettuce, and a sprinkling of blue cheese crumbles.
These burgers were super tasty! They had the perfect amount of heat to them, but heat is such a preference so feel free to go hotter if you can stand it. :) The cucumbers were a fresh alternative to the celery which is typically paired with buffalo wings. And the blue cheese was delicious, even David who is not a huge fan of blue cheese liked his burger (although I topped his with a slice of Munster cheese instead of more blue cheese.)
