As a kid, I loved when my mom made meat loaf. So now as a grown-up, it has become a nostalgic meal. This is a great recipe because the meat stays moist and nothing is worse than a dry meat loaf. I like the mini loaves because the end pieces on a big loaf were always my favorite and each mini loaf is like an end piece. Plus, it is super easy to make and great to serve. :)

- Preheat oven to 350°.
- Mix all ingredients together except the cheese and ketchup.
- Fold in the shredded cheese.
- In a muffin pan, spoon about 1/4 cup of meat loaf into each muffin cup. (Cups will be very full.)
- Squirt ketchup onto each meat loaf.
- Place muffin pan into oven and bake for about 30 minutes.
